Ingredients

2 8 oz Kraft Philadelphia Cream Cheese
3/4 cup sugar
2 egg
1 tsp vanilla extract
1 Tbsp lemon juice, canned or bottled

Instructions

Beat all ingredients well, put one Nilla wafer in bottom of foil cup, fill 2/3 full and pake 17 minutes at 375. Top with pie filling if desired.

Key Lime Pie

1 Reduced fat graham cracker crust

1 pkg sugar free lime Jello

1/4 cup boiling water

2 6oz containers of Light Key Lime yogurt

1 8oz container ff cool whip, thawed

In large bowl dissolve Jello in boiling water, Stir in yogurt with whisk, fold in whipped topping. Pour in crust and refrigerate overnight or at least 2 hours.

3 pts per serving, 8 servings



Mini Chocolate Chip Cookies
2 Tbsp butter, softened
2 tsp canola oil
1/2 cup dark brown sugar
1 tsp vanilla extract
1/8 tsp table salt
1 large egg white(s)
3/4 cup all-purpose flour
1/4 tsp baking soda
3 oz semi-sweet chocolate chips, about 1/2 cup

Preheat oven to 375ºF. In a medium bowl, cream butter, oil and brown sugar together. Add vanilla, salt and egg white, and mix together thoroughly. Mix together flour and baking soda. Add chocolate chips and stir to distribute evenly. Drop rounded half-teaspoons of dough onto a nonstick baking sheet. Bake cookies for 4 to 6 minutes, then cool on a wire rack. Yields 2 cookies per serving

Fruit Dip

 

 

8 oz tub fat free cool-whip
6 oz container yoplait light strawberry cheesecake yogurt
small box sugar free/fat free white chocolate pudding mix

Combine the dry powder pudding mix, cool-whip, and yogurt. Serve with fruit (recommend strawberries, pineapple, and apples)

 



PEANUT BUTTER CHOCOLATE STAR COOKIES
1 cup peanut butter
1 cup brown sugar
1 egg

Mix ingredients together. Form into 1 inch balls and place on an ungreased cookie sheet covered with parchment paper. Press one chocolate star into each cookie. Bake at 350 for 10 to 12 minutes until set. They will firm up as they cool. Remove from sheet.

Makes 48 cookies at 1 point each. I haven't calculated the points on these for several years and don't have time to do it on etools but hopefully they are still 1 point.


Muffins

1 Spice cake mix,  1 can pumpkin (smaller can) and 1/4 cup water make great muffins.

1 Angel food cake mix and 1 can blueberry pie filling  does too.

I can not really tell you the points though because the mixes vary so much. You just have to figure up your mix and how many servings you make.  I made 30 of the pumpkin ones and they were 1 pt each.

Also, as strange as it may sound, the muffins need to sit overnight. They are not near as good until they have.
